Antioxidant Power Booster

Ingredients:

Ground Flax Meal..................................1 Tb ( mix with 2 1/2 Tb of water)

Rolled Oats......................................................2 1/4 Cup

Oat Flour (can substitute for other flours)........3/4 Cup

Pumpkin Seeds (pepitas).................................1/2 Cup

Baking Powder.................................................1 tsp.

Cinnamon.........................................................1/2 tsp.

Nutmeg.............................................................1/2 tsp.

Ripe Banana.....................................................1 each

Sunflower Butter...............................................1/4 Cup

(can substitute for other nut butters)

Honey.................................................................2 Tb

Brown Sugar......................................................3/4 Cup

Vanilla................................................................1 tsp.

Frozen Blueberries............................................3/4 Cup

Dried fruit...........................................................1/2 Cup

(cranberries, raisins, pomegranate seeds, or acai berries)

Dark Chocolate Chips........................................1/2 Cup

 

Directions

1. Preheat oven to 325

2. Line a baking pan with parchment 

3. Toss the oats with honey until they are coated and bake until slightly golden (about 5 minutes) set aside to cool

4. In a small bowl stir in water to the flax meal and set aside to thicken

5. Combine all dry ingredients in a mixing bowl (oat flour, baking powder, salt, cinnamon, and nutmeg)

6. In a separate bowl mix together the banana with the brown sugar, sesame butter, oat milk, vanilla, and flax meal

7. Combine the dry ingredients into the banana mixture until everything is mixed thoroughly.

8. Gently stir in the oats, frozen blueberries, dried fruit, and dark chocolate.

9. Scoop onto the baking pan about 2"-3" a part with a medium size scoop (I like to use an ice cream scoop that holds about 2-3 tablespoons).

10. Place in the refrigerator for about 20 minutes so the dough chill.

11. Bake for about 10 minutes rotating 1/2 way through. The cookies should be slightly golden brown around the edges.

12. Once cool if you desire you can drizzle with more chocolate!  Then ENJOY!
