INGREDIENTS:
Butter...........................................1/2 Cup
Oat Milk.......................................1/2 Cup
Vanilla...........................................1 tsp.
Extra Dark Cocoa Powder..........1/3 Cup
Granulated Sugar.........................1 Cup
Brown Sugar.................................1 Cup
Peanut Butter...............................1/2 Cup
Old Fashioned Oats.....................3 Cups
DIRECTIONS:
1. Line a baking pan with parchment or wax paper
2. In a medium saucepan add butter and oat milk, and vanilla, simmer until over medium heat until butter is melted
3. Add cocoa powder, sugars, salt, whisk until everything is combined
4. Occasionally stirring bring the mixture to a boil
5. Let boil for 1 minute. **I recommend setting a timer so that the mixture is
boiling for long enough**
6. Remove from heat and add peanut butter, stir until it is mixed thoroughly
7. Pour over oats and stir until everything is combined
8. Scoop the cookies onto the prepared baking pan. **I like using a medium size ice cream scoop (about 2 the size of 2 tablespoons) so that all of my cookies are the same size**
9. Press the cookies down and let sit out for about 30 minutes before enjoying! **you can pop the pan in the refrigerator for about 10 minutes to quicken the cooling process.
10. Now ENOY!
**you can store the cookies in an airtight container in the refrigerator for up to 5 days**
