Ingredients:
Shredded Coconut............................1 1/2 Cup
Old Fashioned Oats..........................2 Cups
Brown Sugar.......................................1/4 Cup
Nutmeg................................................1 tsp.
Coconut Oil (melted)........................3/4 Cup
Eggs.......................................................2 each
Vanilla Extract......................................1 tsp.
Orange Blossom Water (optional).....1 tsp.
**for an extra pow of wow you can add 1/2 cup of white chocolate chips**
Directions:
1. Line a baking pan with parchment and set aside
2. Measure Oats and shredded coconut separately and set aside for later
3. Measure Coconut oil, extracts and set aside
4. Measure brown sugar and nutmeg in a larger bowl. Whisk in the coconut oil until combined.
5. Add the eggs to the sugar mixture and whisk until everything is completely mixed in and smooth in consistency.
6. Using a rubber spatula stir in the oats until they are thoroughly incorporated.
7. Last, stir in the the shredded coconut.
8. Once everything is mixed in scoop onto the parchment lined baking pan. (I like using an ice cream scoop that is about 2-3 tablespoons in size.
9. Slightly press the cookies down so they are not domed. Refrigerate for about 20 minutes
10. While the cookies are chilling turn the oven on to 325.
11. Bake the cookies for about 10 minutes or until the edges are golden brown. Rotate 1/2 way through.
12. Let them cool down and then ENJOY!!
