Ingredients:
Old fashioned Oats.......................1 1/2 Cup
Dried Cranberries...........................1/2 Cup
Raisins..............................................1/2 Cup
Frozen Blueberries.........................1 Cup
Honey...............................................2/3 Cup
Sunflower Butter............................1/2 Cup
(other nut butters work too)
Cinnamon..........................................1 1/2 tsp.
Salt.....................................................3/4 tsp.
Vanilla.................................................1 tsp.
Pumpkin Seeds (pepitas)...............1/2 Cup
(can also use slivered almonds or pecans)
Coconut Flakes.................................1/2 Cup
Flax Seed...........................................1/4 Cup
Directions:
1. Preheat oven to 325
2. Line an 8x11" pan with parchment or wax paper
3. Using a food processor or blender mix together cranberries, frozen blueberries, and vanilla until well blended (about 3 minutes)
4. Add Oats, cinnamon, and salt. Pulse until well mixed (about 1 minute)
5. Add Honey and Sunflower butter and blend until mixture is creamed together.
6. Add pumpkin seeds, coconut, raisins, flax seed, and remaining oats
7. Pulse until just combined. Do not over mix (you want some texture with the oats, pumpkin, coconut, and raisins)
8. Spread mixture into prepared pan making sure it is evenly spread.
9. Bake the bars for about 15-20 minutes (rotating 1/2 way through) until golden around the edges. The top should have a light golden crust but still spring back when you press on it.
9. Let bars cool and then cut into desired size squares. Then ENJOY!
